Busy Mama Stays Fit on the Go, and YUMMY Vegetarian Chunky Chili Recipe!

I knew today was going to be a very busy day.  So, I got my exercise in this morning with a quick circuit workout.  I did 10 push ups, 20 burpees, 30 mountain climbers, 40 squat jumps, and plank for 1 minute.  I repeated this circuit 4 times and I was done in about 25 minutes!

I had plans this afternoon and evening, with no time to prepare dinner, so I popped dinner in the crockpot at noon, to cook on low for 6 hours...

Since I had some running around to do this afternoon, I decided to take my lunch to go!
My faithful green monster smoothie!   Do you know how EASY (and excusable) it would have been for me to just run through a drive-through for lunch?  But, planning out your day and planning ahead can help you to make healthy choices.

So, after I dropped my 4 y.o. off at pre-k, I met up with my friend, Sara, for an hour long walk, pushing the babies in the strollers.  We figured that we burned up to 300 calories and went about 2.5 miles, according to the Nike GPS app.  It was quite a workout I wasn't expecting! 

I finished my green monster, ran some more errands, and picked up the kiddos from school.  I put together some green tea to-go (over ice) and we headed to Addy's sports conditioning class, by Elizabeth at Inspire U Fitness.  She had them working hard today!  Addy was red-faced when she was done. 

We got home and guess what?  The crock pot was on "warm" and the chili was ready!  I put together an organic caesar salad (organic romaine, organic fresh-grated parmesan cheese, and organic light caesar dressing) and voila! dinner was served.

Oh and some tortillas broiled for 3 min (with some sea salt & fresh cracked pepper).  My kiddos liked dipping the tortillas in their chili.  Here is the recipe:

Clean Vegetarian Chili
1-2 large sweet onions (chopped)
1 green bell pepper, seeded & chopped
1 squash
1 zucchini
1 bag chopped butternut squash (from produce section)
Organic canned corn or frozen corn
6 oz can organic tomato paste
2 28-oz can crushed tomatoes (low sodium)
4 15 oz cans beans (I used 2 cans organic red kidney beans, 1 can organic pinto beans, 1 can organic great northern beans)
1/2 t salt
1/2 c - 1 c water, depending on what consistency you like
1/2 t black pepper
2 T chili powder

Combine all ingredients in a 6 qt (or larger) slow cooker.  Cook on low 6-8 hrs.
