It's Not Too Late! GREAT Super Bowl Recipes!!

Ok, so I just got home from an AMAZING run (4 miles) outside in the 50 degree weather....and of course while I'm running I'm thinking about all the things I need to do when I get home!  We are going to our friend's house for the Super Bowl Watch Party and I am bringing a couple healthy snacks.  It got me thinking about any of you that might be reading my blog and if you're wondering what to pick up at the store for the game.  Before you go and splurge on Doritos and taco dip, I have a couple QUICK and EASY recipes you can make right now!   Ready...Go!



Guacamole with home made corn chips:


Ingredients
4 ripe avocados
1 Tbsp. lemon or lime juice
2 tsp. garlic powder
1/2 tsp. salt
Directions
Avacados


Step 1 – Remove skins, and place avocados in a large mixing bowl, along with all other ingredients.
Step 2 – Mash all ingredients together until you reach your desired consistency.

Tortilla ChipsIngredients
1 package corn tortillas
1/2 salt
1 Tbsp. garlic powder
Lemon juice
1 tsp. olive oil
Directions
Making Baked Tortilla Chips


Step 1 – Take one bag of small corn tortillas and cut them into 4ths or 8ths. (Please check the ingredients on the tortillas you buy. Not all tortillas are created equal!)

Step 2 – Cover a cookie sheet with a VERY light spray of olive oil.

Step 3 – Lay out your tortilla pieces so that none of them cover each other.

Step 4 – Spray your tortilla pieces with a VERY light spray of olive oil.

Step 5 – Sprinkle with lemon (or lime) juice, garlic and salt.

Bake in the oven at 350 degrees F. until crispy (About 15-25 minutes, depending on your oven).

Home made Hummus


  • 2 cups canned garbanzo beans, drained
  • 1/3 cup tahini
  • 1/4 cup lemon juice
  • 1 teaspoon salt
  • 2 cloves garlic, halved
  • 1 tablespoon olive oil

Directions 


Place the garbanzo beans, tahini, lemon juice, salt and garlic in a blender or food processor. Blend until smooth.
Transfer mixture to a serving bowl.  Drizzle olive oil over the garbanzo bean mixture.

Serve the hummus with the homemade corn chips or some fresh veggies. If you're short on time, puck up some pre-chopped veggies at the store.

Target also has some great healthy dips in their deli section and many times they have ones on sale. When in doubt about whether it's healthy or not, just check the ingredient list.
